    Un menu spécial pour la saison automne/hiver. On commencera par préparer la pâte d'une pizza sicilienne spéciale, la « sfincione », garnie de beaucoup d'oignons. On fera des pâtes fraîches « maccaruni ì casa » accompagnées de brocolis sautés à la poêle, de raisins secs et de pignons de pin, de safran et de chapelure grillée. Et pour le dessert, un rouleau à la crème de ricotta avec des copeaux de chocolat.

    We had the most wonderful experience with Rosa Maria making arancine. We were a group of 7 all family traveling together in Sicily. We make “arancinis” at home and had so much fun learning more about the culinary tradition as it is done here in Palermo. Rosa Maria and her helper was gracious and friendly. I would absolutely take another class with them.

    Simply the highlight of our trip. Rosa Maria was a gracious and welcoming host and an excellent teacher. We learned so much in a short amount of time with Rosa Maria’s expertise and guidance. Les plats que je prépare reflètent cette tradition, que j'aime réinterpréter avec imagination et envie d'expérimenter, toujours dans le respect des recettes anciennes.  Je propose des plats indissociables des produits et des matières premières de notre île. Je vous accueille avec plaisir à Palerme, mais à travers mes saveurs, je vous emmène également à la découverte des parfums de Favignana, d'Ustica et de San Vito Lo Capo.
