    We will have the pleasure of enjoying a welcome appetizer that includes: the "ordure" (a recipe dating back to the 1700s and found in Cavalcanti's book), mozzarelline, salami and pecorino bread, handed down from our grandmother. Next, we will dive into the pasta lesson, during which we will make two formats: typical Neapolitan scialatielli and classic tagliatelle. In addition, we will prepare pastiera and pasta toppings. At the end of the lesson, we will taste what we have prepared, all accompanied by an excellent glass of wine.

    Raffaella and her husband Enzo were so much fun! The lesson was in their apartment in an old restored mansion. We laughed and had the best time. They speak a little English but we mostly communicated with google translate.

    My sister and I booked a three course cooking class for lunch with Cesarina Raffaella and it was a highlight of our trip! Raffaella is a fantastic host and chef. When we arrived her husband gave us a tour of their beautiful home with many of its original elements including frescoes and stonework and we learned about its history along with some history of the area. We are English speakers so their niece joined us to help translate. Before we started cooking we enjoyed some drinks and delicious local salt cake that Raffaella had prepared. The cooking process was super fun and we learned so much! After making the food we all sat down together to eat and everything was delicious including the homemade aperitifs from plants in Raffaella’s beautiful garden. We felt so comfortable and happy through the experience the whole family was hilarious and we were laughing the entire time. The atmosphere was amazing, they have a wonderful home and make you feel like family immediately. 10/10 I highly recommend Cesarina Raffaella for a cooking class. This is an absolute must if you are in Naples or Ercolano. Thank you so much Raffaella!

    The house of our Cesarina Raffaella is located not far from the National Railway Museum of Pietrarsa, from the excavations of Herculaneum and on the Circumvesuviana Naples-Sorrento line. The apartment has preserved the original architectural structure of the Vesauvian Villas intact, with unique episodes of construction techniques, the original flooring with frescoed walls and vaults; this offers, in a family atmosphere, a recognized hospitality and historical charm. Raffaella offers typical Neapolitan cuisine celebrated by Ippolito Cavalcante but also the refined culture of Bourbon culinary art. "The products are carefully chosen the liqueurs are of own production, by our choice and for a better quality, we prepare the dishes on the spot. This can take some time to prepare, but we know that patience is the best way to eat well.
