    Almost Carnival: an experience that combines masks, stories and tales around the fireplace. I will guide you on a culinary journey through the typical recipes of our area: a delicious pappa al pomodoro with basil, homemade cakes and focaccia, and fresh pastas topped with aglione or white chianina ragu. All will be accompanied by the best local wines. To end on a sweet note, we will taste Umbrian strufoli, with honey or alternatively with alchermes, for a mouth-watering and traditional finale.

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
