Christmas is just around the corner, and I would like to recapture that atmosphere of joy and anticipation that once accompanied the preparation of traditional festive dishes: cappelletti, crostini neri, and torciglione di mandorle. I remember the usual questions: "Did you make the cappelletti? How did they turn out? Are you going to add a grating of lemon?" This is how exchanges, traditions, and conviviality were born. In this cooking class, we will prepare these recipes together in front of the fireplace, accompanied by conversation and music. At the end, we will taste the dishes and take home the authentic flavor of Umbrian Christmas.

My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
