Your experience
  • Eggplant parmigiana or caponata (sweet-and-sour Sicilian dish made of fried aubergines, capers, olives and celery)
  • Homemade fresh maccheroni "al ferretto" with eggplants or meat ragù
  • Sicilian Cannoli with fresh ricotta

Directly from his family traditions, Giovanni will welcome you with the typical eggplant parmigiana, amid scent of basil and tomato sauce handed down from father Angelo "Il Conte". Between small talk and history of these dishes, Giovanni will introduce Maccheroni, handmade with "umbrella stick" just as Aunt Amalia used to make them 80 years ago.

After a few memories and a few laughs, the meal will close with the Sicilian Cannolo, world-famous for the embrace between the freshness of its ricotta and the Crispness of its wafer, along with good espresso coffee, as tradition dictates.

What a lovely visit to Chef Giovanni and family in Palermo. Giovanni grew up in the restaurant world in surrounding towns and while cooking was the focus today, we learned much more. We enjoyed Giovanni’s hospitality showcasing our own creations and some local appetizers in his home in central Palermo. Bravo!

Giovanni is a great cook and teacher. He’s warm and friendly and speaks excellent English. He was very communicative before and during our time in Sicily, which was really nice. We had fun at the market where we bought things to cook and Giovanni shared a lot of information about the food and Palermo. It was amazing to meet his family, get to know them, learn to make pasta, gnocchi and artichokes in his kitchen and then eat a feast on his beautiful roof deck, which he worked hard to create and served so graciously. We felt like family! He was very flexible about the things we cooked, especially after I saw so many artichokes in the market! He’s a good teacher, fun and patient. It was a terrific experience!

At Giovanni and Roberta's home, you'll find the typical dishes of Sicilian tradition. Giovanni grew up amidst the kitchen aromas of the family restaurant on the bay of Taormina. He inherited his father's recipes and brought them within the walls of his home in Palermo, creating new flavors with a sprinkle of memories. Fresh pasta takes the spotlight in his first courses: maccheroni alla norma, gnocchi with pistachio and shrimp, and ricotta and orange ravioli. Continuing with eggplant or swordfish parmigiana that pairs with lemon-infused meatballs or traditional Messina-style braciolettine. The meal concludes with the bittersweet taste of orange sorbet or the special almond blancmange.
