Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience

We will learn together, hands-on, some basic Italian pastry basics. We will prepare classic sponge cake, ideal for cakes to be filled and decorated. We will make different versions of shortcrust pastry: classic shortcrust with flour, eggs, sugar and butter; oil shortcrust, which uses oil instead of butter; and light shortcrust, without eggs. In addition, we will make custard and chocolate custard. With these preparations, we will create small treats to taste together, to end our experience in sweetness.

Clara and her family welcomed us into their home with open arms and it was such a great experience for our family. We have 2 teenagers and weren’t sure how they’d like taking a cooking class. They loved it! Our daughter has a gluten allergy and Clara was more than accommodating than I expected. She had prepared our daughter with a special gluten free lasagna along with her own mozzarella and tomato salad. We made tiramisu and ravioli and another pasta, all exceptional. We enjoyed our dishes afterwards with Clara’s husband and 2 daughters. It was such a great day for all of us, I’d highly recommend you take one of Clara’s classes, you will not be disappointed! She’s the best!

Clara was extremely kind and opened her home to my husband and I on our honeymoon. Her family was sweet and she showed us some amazing recipes that we can’t wait to make for our family back home. She also was very helpful in communicating things to do while we were there. Would highly recommend!

Our cooking class with Clara was a great and memorable experience! Clara was so personable and had many great insights. We enjoyed the conversations with her and her home! The food was also amazing! We learned so much and cannot wait to get back home and make all the amazing food she taught us! I will definitely recommend Clara to anyone wanting to see what it’s like to live locally and to learn so great pasta skills!

My name is Clara, born in Paris to Campanian parents. I lived in Sorrento until the age of 18, and then I traveled around the world for work. I immediately fell in love with trying international and multicultural cuisine, and while working on cruise ships as a hotel manager, I learned firsthand how to navigate large kitchens on 4-star floating hotels. It was there that my passion for pastry also emerged, leading me to deepen my studies at Compait and attend various courses for artisan bread-making. I greatly enjoy teaching what has always been a profound passion of mine. My specialties undoubtedly include desserts, artisan bread, basic pastry, and the traditional sweets of my region. Pastiera, sfogliatelle, and other delights. I also love making pizza and fresh pasta with great enthusiasm.
