    A tasty but light variant are the fried pizzas: salted with tuma (a Sicilian cheese that is also used for closed pizzas) and olives and if you want fresh onions. The sweet version has the same dough, but inside it has a heart of processed ricotta, like the ricotta in Sicilian cannoli. Plus you will have the opportunity to taste aperitifs accompanied by a typical prosecco from Etna. Then if you have a sweet tooth, we will prepare a mascarpone and yogurt cream, flavored with passito wine, and accompanied by the ancient 'ciciulena' cookies, sesame seeds. Tradition, however, recommends ending the menu with honey rice crispelle, to whose dough the zest of lemons and oranges is added! The working of the dough is strictly by hand, sleeve lifts and on apron.
