I love blending traditional recipes with something new, always respecting the scents and flavors of our beautiful land. Each thing we will prepare together and enjoy has its own story, which I will tell you in detail. Sicilian almond pesto, for example, a traditional Sicilian recipe for an excellent first course, is enhanced by other scents and flavors of our land.

Pasta with ricotta cheese, another traditional first course from Catania, is enriched with "'nduja," a typical Calabrian salami that is increasingly becoming part of Sicilian cuisine as well. The "tiramisu," a dessert that is now part of all Italian traditions, will have a Sicilian touch given by the wine "marsala." These dishes will be preceded by several samplings of Sicilian flavors.

I had the chance to do this cooking class with Maurizio, who was an exceptional host. Not only were the dishes prepared (two types of pasta with their sauce and a tiramisu) original and delicious, but he also paired each step with a drink (virgin cocktail, prosecco, wine, etc.). We discussed at length his passion for music and many topics concerning Italy, all in a good atmosphere and very pleasant good humor. We did not see the time pass and went well beyond the three hours of basic class. I highly recommend Maurizio!

We really enjoyed the cooking class with Maurizio in his home. We did the 2 pasta and tiramisu class, and it was all very hands on, not a demonstration. The recipes were great, and the antipasto he provided was delicious. He is quite the character, and had great tips and fun stories.

Maurizio was amazing what a fantastic cook. He was so welcoming and generous with all the beautiful food and wine. There were 5 courses and we helped him cook some of them too. He is so kind and we got to the desert course and we were so full we only had a small amount so he gave us all the tiramisu and leftover pasta to take home and eat. It was so delicious. If you love great food good company and some wine and to learn about Sicilian cooking please consider spending some time with Maruzio he was truly awesome.

Highly recommend! When we arrived, we were greeted with a breakfast platter of still-warm bread and Sicilian specialties. We then prepared two pasta dishes (pasta dough and sauces) and tiramisu. We were also able to taste Sicilian wine and Prosecco. Maurizio was also very considerate of my fructose intolerance (wine in sauces was substituted and I got my own drink). We did every step of the recipes ourselves and were given lots of tips - the food was fantastic and Maurizio packed up the rest for us to take with us. Even though the cooking class was from 10 a.m. - 1 p.m., we didn't leave until 1:45 as Maurizio took the time for us so that we could cook and eat without any hurry. Great experience!

My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
