Eggplant Parmigiana has disputed origins between Sicily, Campania and Emilia Romagna.
Here in Sicily, however, we love to overdo it, and we even have two traditional recipes: one from Catania and one from Palermo. Both cities, of course, claim that theirs is clearly better and "more original" than the other, but I, who am a little bit Catanese and a little bit Palermoite, decided to teach you both recipes and then ask you which one is the best. So lace up your aprons and get ready to be part of a historic rivalry that sees two beautiful cities like Catania and Palermo compete on everything despite being daughters of one beautiful island.
