The arancino is an iconic dish of Catania’s cuisine, with ancient origins and deep roots in Sicilian tradition. Although its preparation is simple, it requires care and attention to achieve a crispy outer layer that encases a creamy heart. The classic filling is ragù, but there are variations with butter and ham, pistachio, spinach, or mushrooms. During this experience, in addition to discovering the secrets of making an authentic Catanian arancino, you will also learn to prepare a special tiramisu, enriched with local ingredients that make it unique. A journey through the authentic flavors of Sicily!

What an amazing day. Our cooking class with Mauricio began at the oldest market in Catania where we purchased cheeses, vegetables and seafood to use in our class. The market experience itself was was an experience on its own. We got to taste some amazing cheeses and incredible sun-dried tomatoes. On the walk to Maurizio’s apartment we stopped to purchase a loaf of bread that was still warm. Once at the apartment we had some of the cheeses along with other appetizers and discussed Maurizio’s extensive music collection. Following that we made four dishes, a shellfish appetizer, two pasta dishes and a tiramisu. All through the process, we were given secret tips, we discussed various techniques and we made incredible food. After stuffing ourselves with incredible food and more than enough wine, and sharing some incredible stories, Maurizio had a special surprise that topped of an already incredible day. We have done multiple cooking classes in multiple countries (it is what we do) and I would have to say that this outdoes all of them. Thank you Maurizio for a wonderful experience. We hope to see you in Canada!

We had such an amazing time at this cooking class! Maurizio did a wonderful job explaining everything step by step and made us feel comfortable from the very beginning. We had so much fun, laughed a lot, and truly enjoyed the whole experience. It was the perfect ending to our short trip to Catania for a bachelorette weekend. We learned a lot, the food tasted absolutely delicious, and the recipes felt very authentic and traditional. You can really feel the passion behind the cooking and the warm atmosphere. We would definitely recommend this experience to everyone visiting Catania!

We had an absolute wonderful time at our cooking class with Maurizio! It was the highlight of our trip. Maurizio was a great host and made us feel right at home. He let us do all the cooking and guided us through it all. We made dough and then cavatelli and tiramisu for dessert. We all sat down together in his beautiful dining room and ate our fabulous meal. After dinner, we had a wonderful surprise and he createdmusic for us on his piano! It was so beautiful I was brought to tears. I would highly recommend this cooking class! Maurizio, it's not only a great chef , but a very talented musician !

We had an absolutely wonderful afternoon. Maurizio was totally accommodating to my two small grandchildren. The food was wonderful but the experience was amazing. We went as a family of my husband and myself as well as my daughter and her husband and our two small grandchildren. The kids felt right at home and we felt part of Maurizio’s family. He was very generous with his time and his experiences. I would highly recommend this class but be prepared to walk away totally packed. We could not believe how much food and wine we consumed.

My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
