    The arancino is an iconic dish of Catania’s cuisine, with ancient origins and deep roots in Sicilian tradition. Although its preparation is simple, it requires care and attention to achieve a crispy outer layer that encases a creamy heart. The classic filling is ragù, but there are variations with butter and ham, pistachio, spinach, or mushrooms. During this experience, in addition to discovering the secrets of making an authentic Catanian arancino, you will also learn to prepare a special tiramisu, enriched with local ingredients that make it unique. A journey through the authentic flavors of Sicily!

    I had an absolute amazing time with Maurizio! From the abundance of apps, welcome special sparkling fruit blend. Followed by several hours of cooking 3 different pastas (with lots of accompanying wine!), he made for an unforgettable morning, afternoon. Wonderful company and food; can’t recommend him enough!     Absolutely amazing experience! From the second you walk in you get transitional snacks and beautiful fresh bread you could be full off this alone. You make 2 pastas and tiramisu we were so full we got to take home the leftovers which was so nice. Maurizio is such a lovely and fun host. You should ask him to show you his music room he is very talented. Would recommend to anyone well worth going for a traditional experience!!! 10/10

    We thought we were just going to get a cooking class. We got a lot more! We started with Anti Pasta and wine and nice discussions. Then we moved on to the pasta making. (I cannot wait to try my newfound talents of pasta making on my family) From there, we had great discussions and then the music started. He is a great musician and shared his musical talents with us. Unfortunately, we had to leave. Regardless, we have made a lifelong friend.

    My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
