    I love adding a modern twist to traditional dishes, enhancing the aromas and flavors of our land. In this course I will guide you in the preparation of three typical dishes revisited in a gourmet key. We will start with grandma's salad, a classic from Catania made more refined with datterini, oregano "scopazza," soft salted ricotta and nocellara dell'Etna olive oil. We will continue with an almond pesto pasta, enriched by the freshness of lemon zest. We will conclude with a Sicilian tiramisu with Marsala wine. The experience will be accompanied by traditional Sicilian tastings.

    I was lucky enough to have a private class with Maurizio who was fun and knowledgeable. Fresh pasta with an almond pesto, his own white onion basted pork loin and tiramisu were on the menu for my visit. A great host and a very interesting man.

    Maurizio was so lovely and very accommodating. He had everything set up ready to go when we got there with local cheeses and wine. He was very thorough with his advice and helped us to make two different pastas and a beautiful tiramisu. There was heaps of food and plenty of wine to enjoy.

    I had such a wonderful experience on the Cesarine Walking Street Food Tour in Catania, Sicily. Maurizio was an incredible host — thoughtful, welcoming, knowledgeable, and genuinely great company throughout the tour. It felt less like a tour and more like exploring the city with a local friend. The food was absolutely delicious and gave a real taste of authentic Sicilian street food and culture. One of the most special parts of the experience was unexpectedly participating in the blessing of the roses in honour of Saint Rita, which made the day feel even more meaningful and memorable.     What an amazing day. Our cooking class with Mauricio began at the oldest market in Catania where we purchased cheeses, vegetables and seafood to use in our class. The market experience itself was was an experience on its own. We got to taste some amazing cheeses and incredible sun-dried tomatoes. On the walk to Maurizio’s apartment we stopped to purchase a loaf of bread that was still warm. Once at the apartment we had some of the cheeses along with other appetizers and discussed Maurizio’s extensive music collection. Following that we made four dishes, a shellfish appetizer, two pasta dishes and a tiramisu. All through the process, we were given secret tips, we discussed various techniques and we made incredible food. After stuffing ourselves with incredible food and more than enough wine, and sharing some incredible stories, Maurizio had a special surprise that topped of an already incredible day. We have done multiple cooking classes in multiple countries (it is what we do) and I would have to say that this outdoes all of them. Thank you Maurizio for a wonderful experience. We hope to see you in Canada!

    My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
