We’ll meet in the tasting room, then walk together into the garden, surrounded by lemon trees and wonderfully fragrant basil plants. There, we’ll pick fresh basil leaves and return to the tasting room, where I’ll guide you through a sensory journey: together, we’ll discover the aromas of Ligurian olive oil by smelling and tasting it.

I’ll tell you the story and origins of Genovese pesto, explain the importance of using high-quality ingredients, and teach you how to use the traditional marble mortar to make pesto—the best you’ve ever tasted, trust me, Ligurian’s word of honor!

We’ll then taste it on focaccia, accompanied by a glass of Cinque Terre white wine, while I tell you about its grape varieties and what makes it so unique.

I deeply love working with the mortar, an ancient tool that, to me, represents the very soul of traditional cooking. In particular, I enjoy preparing authentic Genovese pesto, starting with the harvesting of fresh basil from the small garden near my home. It’s a moment that reconnects me with nature and with the simple, timeless gestures of the past. After carefully selecting the most fragrant leaves, I move on to the mortar, combining them with the other classic ingredients: pine nuts, Parmesan cheese, garlic, extra virgin olive oil, and a pinch of salt. It’s a slow, almost meditative process that releases all the aroma of the basil and transforms the ingredients into a velvety, intensely fragrant cream.
