    I propose the preparation of a dish typically enjoyed in winter, but for dessert lovers, there's no wrong time to enjoy it: pizzoccheri. A traditional dish from Valtellina, made with few ingredients, pizzoccheri are a variety of short tagliatelle pasta, either fresh or dry, prepared with buckwheat flour. They are cooked with potatoes and savoy cabbage, or for those who prefer not to use cabbage, Swiss chard, all mixed with cheese, butter, and sage.

    To prepare pizzoccheri, you need to mix buckwheat flour, type 0 flour, and water, giving this pasta a shape similar to short and wide tagliatelle. To finish, a pistachio dessert, easy to prepare yet delicious!

    Maria was a wonderful host who made us feel so welcome in her home. Maria was a great teacher and made the experience so much fun.     I really enjoy working in the kitchen and love learning to prepare new dishes, which, along with traditional recipes, are always well-received at my table. I have Neapolitan origins, so those who come to eat at my place usually prefer that cuisine. However, I take pleasure in cooking any kind of recipe: from appetizers, soups, first and second courses of meat and fish, to desserts. All of this is tied to a light and flavorful cuisine, limiting the use of fats and fried foods.
