Learn the recipe for a foolproof pizza that you can easily replicate in your home oven!

I'll host you in my kitchen and teach you the dough for a long rising (24-48 h) pan pizza made with sourdough. We will range from the classic margherita with stracciatella and basil to fancier toppings using local seasonal produce. We will also make the dough for a focaccia with rosemary from my garden and olives. I will teach you all my tricks, from salting to hydrating the dough. Finally, the ever-present coffee tiramisu with chocolate chips! We will see together the many different ways to plate it.

I love making bread and pizza with sourdough and a minimum 24-hour fermentation, fresh pasta (like tagliatelle, gnocchi, and tortellini filled with herbs and typical cheeses, or with pumpkin), and risottos (such as Amarone and Monte Veronese or vegetable risottos from my garden). In our home, we are all vegetarians/vegans, so I prefer ingredients of plant origin. However, I can also cook well with animal-based ingredients if guests want to try some typical Venetian dishes! For example, risotto with "tastasal" (sausage), boiled meat with "pearà," "pokenta," and stew.
