Welcome to Val Brembilla, a peaceful corner in the mountains where time stands still.

I invite you to take part in a Bergamo-style cookery class – a special opportunity to immerse yourself in traditional techniques and discover the secrets of our most authentic flavours, literally getting your hands dirty. The focus of our session will be making casoncelli: together we’ll discover how to work the dough, shape it perfectly and seal the filling, one by one. This won’t be a simple tasting session, but a hands-on experience where you’ll take the lead in creating the dishes. Once we’ve finished, we’ll have the pleasure of sharing the fruits of your labour, accompanied by a good glass of wine.

If there’s one thing I love, it’s getting my hands into flour: maltagliati, lasagna, and stuffed pasta hold no secrets for me. From slow-cooked tripe to pear and Strachì Tunt risotto, my table is a journey through the bold flavors of rural tradition, where steaming polenta and a good glass of wine are always present. For me, cooking means welcoming people and sharing my story through aromas that taste like home and the Orobie valleys.
