Since I was little, I knew that good food would always be a part of my life, and today I want to take you into the book of my dearest memories. The scent and taste of round purple eggplants are unforgettable, and I still prepare them using my mom's recipe: stuffed with salami and smoked provola, breaded with flour and eggs, and fried. Here they are: the Melanzane alla Pullastiello!

Another classic Neapolitan dish is spaghetti frittata, a staple of our outings. This "leftover" recipe turns leftover pasta into a delicious, stuffed dish with ham and mozzarella!

To finish, the sweetest memory: layers of ricotta and cookies with chocolate chips!

: Emanuela and Maurizio are some of the kindest most welcoming people I've had the pleasure to meet. I signed up for a cooking class but left with an extremely fulfilling knowledge and understanding of Napoli and its culture. A must for everyone looking to experience Napoli in its most authentic form :)
