    Le sfince sono delle frittelle morbide e aereose , particolari di Palermo, che vengono fritte e riempite con crema di ricotta, gocce di cioccolato e scorzette d’arancia.

    Il loro nome deriva dall’arabo e significa spugna . Vengono preparate per la festa del papà , ma in realtà data la loro bontà si trovano in tutte le pasticcerie di Palermo da novembre a maggio . Abbinerò a questa prelibatezza un Moscato dell’Etna , un vino dolce passito con delle note fruttate e una leggera mineralita’.

    A Cooking Class Worth Being Stranded While my family stayed on Ustica (an island 20 ish miles away) my son and I took the ferry to Palermo to learn how to make Sicilian pasta and cannoli. Rosa Maria is clearly an accomplished cook, which we learned runs in her family. She is also a talented teacher. When we couldn't quite the the hang of shaping the pasta without crushing it, she was patient but clear in her instructions so I know what to practice when I get home. Sitting down to lunch was lovely. We got to know her husband and Ate Sally. We were sent home with leftovers which was a saving grace when we arrived at the port and learned all ferries had been cancelled till the next morning, standing us in Palermo for the night. In all the chaos that followed, we at least had good food to eat. The next morning as we rode the ferry back to Ustica, I had no regrets.

    Rosa Maria was absolutely amazing! She was very knowledgeable on her culinary skills. Rosa was patient, kind & very charming. The food was absolutely fantastic. I cannot wait to try all her tricks & recipes when I get back home. I would highly recommend her cooking class!

    My family and I had a wonderful time at Rosa Maria’s house. She was very welcoming and her instruction was fun and helpful! This has been our favorite activity in Sicily - we highly recommend! The food was delicious and the hospitality was exceptional. Thank you Rosa Maria and Massimo :)

    Rosa Maria was an incredible host! She welcomed us into her beautiful apartment in Palermo and taught us two different pasta dishes and a traditional Palermo dessert with watermelon. The food was delicious and Rosa Maria gave us great tips to be successful in our cooking. She taught the class in both English and Italian which was accommodating for all guests.
