    An evening to learn the secrets of pizza dough and its baking.

    The evening will take place in the garden where Alvaro has built his corner Wood-fired oven and barbecue. The breathtaking view of Siena and a craft beer from the nearby La Stecciaia company will do the rest. The menu will include as appetizer a tasting of ciaccini with pecorino, sausage, pachino or simply rock salt and rosemary. Next will be a margherita pizza tasting where each guest will provide their own pizza spread. To finish sweet pizza with sugar and hazelnut cream. The experience is only possible on serene summer evenings.

Under Alvaro’s expert guidance, we explored the art of preparing the perfect aperitivo—an elegant and joyful tradition that celebrates good company, local flavors, and relaxed conversation. Together, we created a selection of five refined nibbles, each one a delicious tribute to the region’s ingredients and culinary heritage. From delicate crostini topped with creamy cheeses and herbs, to savory bites infused with citrus and olive oil, every element was thoughtfully paired with a refreshing glass of fizz—Prosecco, of course—or a light, local red wine. What made this experience truly unforgettable was the warmth and generosity of Alvaro’s family. Their stories, laughter, and passion for food made the evening feel like a gathering of old friends. This is not just a class—it's a celebration of Italian life, shared one bite and one sip at a time.     Our pasta and tiramisu experience outside of Siena was out of this world! Our hosts were amazing and did their utmost to make us feel at home and spent so much time imparting their knowledge about the food. It was a fun hands-on experience and very connecting. It was truly the highlight of our 2 week vacation and I would recommend this experience to anybody who is considering it. Truly memorable!

    Our Cesarino Alvaro has a special and original culinary history: at the age of 14 he moved to Siena to work as a cook, at the age of 18 he opened his restaurant and at the age of 22, life chose a different path for him. He became Mayor of Rapolano T., then he opened a company and, now that he is retired, he can return to his first love, cooking. “I like to talk about the history of my country and my cuisine, everyone is incredulous about the hidden treasures of this territory, both from a historical and culinary point of view.”
