Your experience
I carry on the family tradition with the preparation of typical dishes from the Tuscan Maremma. You will learn how to create Tortelli maremmani with ricotta, spinach, Swiss chard and nutmeg, and "Malfatti," gluten-free gnocchi made with ricotta, spinach and egg. The class will culminate with the making of a delicious "Tiramisu," offering two basic options: with Savoiardi or Pavesini. At the end of the cooking school, we will relax with an aperitif of prosecco and local specialties such as pork and wild boar salami, pecorino cheese, crostini and bruschetta, accompanied by sottoli. During the following lunch, you will have the opportunity to taste excellent Chianti wines from the renowned surrounding wineries. An authentic culinary experience that celebrates the flavors of the Maremma.

- Hilary was a gracious teacher and host. We felt very comfortable as she showed us how to make the pasta, rolling and kneading the dough. We learned how to make the tiramisu, which was wonderful. We were invited to dinner with her husband and daughter. Hilary’s husband helped as well clearing the table. It was a great experience.
