The Sant'Ambrogio market is the oldest food market in Florence and the one where locals continue to shop.

It is an authentic and interesting market where King Charles spent an entire morning when he was still a prince. Filled with local vegetables, meat and fish, it is a great place to start our class by buying some fresh ingredients and exploring the most interesting stalls.

After the market, we will walk to my house and start our cooking class. We will prepare, depending on the season, fried flowers or a bruschetta with seasonal ingredients, homemade ravioli and a dessert.

We had the best evening with Carlo at a private cooking class at his home! We also stayed in the Airbnb he owns, so we were able to meet him beforehand. He let us choose one of the dishes we’d be making (ravioli). Carlo was patient, kind, and welcoming. The dinner we had was the best meal we had while in Italy - Ravioli, Cacio e Pepe, and Tiramisu. Wine was served throughout the class, and we also got to try his homemade Limoncello! Everything about the class exceeded our expectations and we highly recommend. Also, his dog made a surprise visit, and she’s cute as can be😊

For years, I have also been dedicated to the search for cuisine that is not only delicious but also health-conscious: low-cholesterol and low-sugar desserts, and homemade pasta made with stone-ground flours from small mills... In many cases, it is possible to cook great dishes with local ingredients, without compromising on health." However, this should not be an excuse for creating mediocre dishes: if they are not good, it's pointless for them to be healthy!
