    I lived in South America 30 years where I was an ambassador of Italian cuisine and homemade pasta. My father was my great teacher, he passed on to me his passion for cooking and his great love for Sicily, especially Catania, where he lived with my mom 10 years. This is why I decided to move here, to this city and to spread the cuisine of this wonderful land, so generous and fragrant. I put special attention in the presentation of the dishes and the table. The menu consists of eggplant parmigiana, pasta with red pesto, sarde a beccafico, lemon granita, accompanied by a natural wine from Etna. I welcome my guests to my cozy apartment overlooking the sea.

    My cooking class with Laura was the highlight of my Catania stay! Laura was flexible on the menu and happy to adapt to my preferences. We made a delicious caponata, pasta alla Norma and tiramisu in her gorgeous apartment kitchen, and shared a natural rose from her friends’ winery on her balcony with views of Catania and the ocean . She was patient and helpfully explained the rationale behind certain ingredients and steps so I could easily adapt when I attempt the recipes back in Melbourne. Highly recommend !!!
