The predominant colors of Sicily are those of the sun and the earth, and I like to bring them to my table. The bruschetta with green and black olive pâté are an example, as are the baked anelletti where the red of the tomato predominates over the green of the basil and the purple of the eggplant. However, it is not only the colors that will satisfy my guests. In fact, the meal I offer will be rich above all in the flavors of Sicily, and the cassatine al forno, which I propose as dessert, will send you into ecstasy. At the end of the meal I like to offer a yellow limoncello made by me with organic lemons from my countryside. I look forward to offering you a meal imbued with Sicily!

I am aware that I am not a chef! That's why my passion for cooking has become pure enjoyment. I have fun preparing traditional Sicilian first courses, such as baked 'anelletti,' which I have transformed over time using my imagination, or 'braciole messinesi' that I learned to cook from my mother-in-law, an excellent Sicilian meal maker. But what gives me the most joy is the expression of 'pleasure' in the eyes of my diners when they savor one of my dishes. I like to enhance the flavors of the dishes with the use of typical Mediterranean herbs, such as basil and mint. Lately, I have also learned to cook vegetarian and vegan out of necessity, as my three children have chosen to give up meat and fish for a few years. I don't really enjoy making desserts, except for 'Cuccia,' the typical Palermo sweet, made with sheep's ricotta and wheat, which is only prepared on December 13th. Maybe it's because it's my birthday?
