    An immersion into my family kitchen; being the daughter of an art, I will let you savor home cooking with Mediterranean fragrances and flavors.

    My menu:

    eggplant rolls: this appetizer consists of slices of eggplant fried with typical cheese, rolled up, and covered with fresh tomato sauce.

    maccheroni with "arriminati" broccoli: this fresh pasta is dressed with a sauce made of broccoli, saffron, raisins, and pine nuts. It was featured as the recipe of the month in the Italian cooking magazine "Cucina Naturale" in November.

    cannoli: a delicacy waiting to be discovered.

    Amazing! Rosa Maria prepared an incredible experience for us, opening her home and teaching us skills with patience, passion and humor. Highly recommend! The meal was made with simple, fresh ingredients and we feel like we could re-create the meal at home. She is humble, but we discovered she owned a family restaurant that received 2 Michelin stars. A highlight of our trip!

    I wish there was a sixth star to give. Maria Rosa learned to cook in her father’s restaurant which had 2 Michelin stars and it comes through in everything, not only the food but the hospitality as well. Her friend Sally help with some English and with the cooking. You have to cook with them.

    In Sicily, particularly in Palermo, there is one singular regional cuisine: pasta, olive oil, vegetables and oily fish varieties, are the four cardinal staples. The dishes prepared by Rosa Maria reflect this tradition, revised with imagination and the desire to experiment, in keeping with the ancient recipes.

    Our Cesarina offers dishes inextricably linked to products and raw materials of the island; Rosa Maria welcomes us in Palermo but invites us to discover the aromas and flavors of Favignana, of Ustica and of San Vito Lo Capo.
