We have preserved the secrets, anecdotes, and recipes of both Bourbon and popular, rural and maritime traditions, ready to be discovered, shared, and appreciated by our guests.

    My cuisine celebrates the culinary traditions of the Bourbon, maritime, and peasant cultures, passed down from my ancestors and shared joyfully with my guests. I offer dishes rich in history and flavor, such as cavatelli with mussels, rice with potatoes and mussels, and gratinated mussels. Seafood delights include fish stew, fish soup, and stuffed cuttlefish. For vegetarians, I present delicacies like cavatelli with chickpeas and peppers, pasta e fagioli, and spaghetti with green beans. Homemade specialties feature focaccia, mozzarella, and burrata. And let's not forget meat dishes like pecora in pignata and ragù with brasciole. Among ancient dishes, you'll find Maccheroni alla Nobile with basil and mushrooms, in a crust of basil-scented cheese, timpano, and onion calzone.
