Making pasta by hand (especially in company) is a fun and relaxing experience; you chat and laugh, and what a pleasure it is at the end to be able to say: “I made this myself!”
You start by mixing flour and water on the work surface to create a smooth, soft dough. We then continue by ‘rolling’ the dough with the palm of the hand until we have a long strand of spaghetti. We’ll serve it with aglione sauce, the so-called ‘kissing garlic’ (which doesn’t have the strong smell of ordinary garlic), or simply with tomato and basil sauce, or even with a meat ragù. Next, we’ll make white wine ciambelline or almond tozzetti to enjoy with ricotta cream flavoured with honey and orange zest or vin santo.

One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
