    This course involves making ‘Umbrian testo cake’ filled with herbs and sausage, or with local cured meats and cheeses.

    The dough is simply made with flour, water and oil and baked on a terracotta "testo"; it requires no added fat and brings out the natural flavours, resulting in a soft yet crispy flatbread, enhanced by the intense flavour of the cured meats and herbs. Afterwards, we will make white wine ciambelline or almond tozzetti to enjoy with vinsanto or a ricotta cream flavoured with honey and orange.

    My favorite dishes are those made with long-fermentation doughs. One of my specialties is the Easter cheese bread, infused with the warm and inviting aromas of cinnamon and cloves. All my pasta is handmade, paired with simple yet flavorful sauces, such as *aglione* and white Chianina ragù. For desserts, I often prepare zuppa inglese, made with the traditional Umbrian torcolo soaked in alchermes, and salame del re, two delightful classics of Italian tradition.
