Cooking is creativity and contamination: I love japanese food and recipes and I want to propose youan experience in which the raw materials of the Piedmont region are interpreted with Japanese techniques and aesthetics.

Together with Alessio and me we will cook by learning the secrets of three fusion recipes: we will start with steamed boiled ravioli and then there will be the Piedmont version of ramen. We will end on a sweet note with doraiaki with gianduja cream and hazelnut granola.

Overall the tour was great and was my first tour where I was the sole attendee. Sara and Alessio were very enthusiastic and showed me a number of places alongside the rich history that accompanies them. For their first tour, it was a lovely experience. With time, they shall be well rehearsed and develop a better relationship with the food stops to ensure a smooth experience. I highly recommend them both if you want to feel like a local with all the tips!

Tradition is an innovation that has brought us this far. Starting from the local raw materials, I transform them following both the lessons from my mother and grandmother and the techniques learned through studies and travels. For me, cooking is primarily about conviviality, sharing, and exchange... Always accompanied by a good glass of wine! I prefer first courses and baked goods, smoked meats, and recently I have been producing homemade cured meats. My favorite dish... It's the next one I'll have the opportunity to try!
