Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience

Today, we will discover together two recipes that capture the essence of Umbrian tradition: ricotta and spinach tortelloni and arvoltolo, a rustic delight typical of the region.

The tortelloni, larger and more generous than the classic tortellini, perfectly highlight the combination of the creamy ricotta and the freshness of the spinach. It’s a rich yet delicate dish, perfect for a family meal or a special occasion.

The arvoltolo, on the other hand, is a simple and genuine dish, a symbol of Umbrian country cuisine. With its authentic flavor and fragrant texture, it is a true tribute to the local tastes.

Get ready to get your hands in the dough and enjoy a culinary experience that celebrates tradition and conviviality!

What a wonderful experience with hostess and teacher Arlesiana, from start to finish! Warmly welcomed in her Umbrian country home where she and her lovely family had beautifully decorated the table for our Christmastime gathering. We were served homemade focaccia bread filled with homemade olive oil and meats and cheeses , enjoyed with delicious percecco. After introductions and the apertite, we began our cooking class! We began with make the homemade tarrimesu, all made with fresh ingredients. Then the pasta sauce with fresh grape tomatoes, puree, basil leaves, leeks and shallots, no onions! Made the whole kitchen smell so good! There were five of us at the large wooden table island in the center of the kitchen, each with our own apron, and supplies to make our pasta, two different types! Then the pasta dried, the sauce cooked down and we were ready to bring it all together with fresh basil and freshly grated parmesan cheese! We sat at the gorgeous table, toasted, enjoyed our delicious creations together and wonderful conversation…the evening flew by, making new friends by the of the evening!! I highly recommend this experience to others, it is a very authentic Umbrian countryside experience with a very special family!! I would definitely return again!!

Cooking has always been my passion since I was a child. I primarily focus on traditional dishes from my region, Umbria. I especially enjoy making fresh homemade pasta and typical recipes from my area. While I am deeply rooted in tradition, my love for travel has enriched my culinary experience, allowing me to explore and absorb influences from the cuisines of other Italian regions and foreign countries.
