- We loved our Italian cooking class! The minute we walked in the door we felt so welcome by Arlesiana and her family. They were so hospitable and made us feel like part of their family! At the start of the evening, before we started cooking, we were served delicious sandwiches and cheese along with Prosecco and got to chat with the family a bit. For the cooking class we learned how to make tagliatelle pasta with a tomato based sauce with sausage and for dessert we learned how to make tiramisu! The best learning came from watching Arlesiana work and trying to copy that. She didn’t speak English but we were able to joke, laugh, and communicate well especially with her son translating. She is clearly a passionate, seasoned artisan cook and it was a gift to watch her and be directed by her. She made things look so easy and gave us direction when our technique was off. The ingredients and directions were simple, but the motions and execution of the recipe would have been impossible to learn just from reading it. She was gracious and sent us the recipes plus some extra recipes we didn’t have time to make and offered to answer any questions we have by email about any Italian cooking when we returned home. The food was delicious and Arlesiana sent us home with leftovers! We actually made the recipe again at home and it was wonderful! We really felt like we had a glimpse into an Italian home. We had great conversation while cooking and over dinner about how our two countries were so different and the goodness of each of them. We learned so much culturally and culinarily! Arlesiana and her family were kind and warm and they went above and beyond to make us feel welcomed. At the end of the night we weren’t sure if we’d be able to get a taxi back to our apartment in Assisi and Arlesiana’s son graciously offered to give us a ride back. We really felt like we had become part of the family and we hope to see them again!
- What a wonderful experience with hostess and teacher Arlesiana, from start to finish! Warmly welcomed in her Umbrian country home where she and her lovely family had beautifully decorated the table for our Christmastime gathering. We were served homemade focaccia bread filled with homemade olive oil and meats and cheeses , enjoyed with delicious percecco. After introductions and the apertite, we began our cooking class! We began with make the homemade tarrimesu, all made with fresh ingredients. Then the pasta sauce with fresh grape tomatoes, puree, basil leaves, leeks and shallots, no onions! Made the whole kitchen smell so good! There were five of us at the large wooden table island in the center of the kitchen, each with our own apron, and supplies to make our pasta, two different types! Then the pasta dried, the sauce cooked down and we were ready to bring it all together with fresh basil and freshly grated parmesan cheese! We sat at the gorgeous table, toasted, enjoyed our delicious creations together and wonderful conversation…the evening flew by, making new friends by the of the evening!! I highly recommend this experience to others, it is a very authentic Umbrian countryside experience with a very special family!! I would definitely return again!!
