The arancino is an iconic dish of Catania’s cuisine, with ancient origins and deep roots in Sicilian tradition. Although its preparation is simple, it requires care and attention to achieve a crispy outer layer that encases a creamy heart. The classic filling is ragù, but there are variations with butter and ham, pistachio, spinach, or mushrooms. During this experience, in addition to discovering the secrets of making an authentic Catanian arancino, you will also learn to prepare a special tiramisu, enriched with local ingredients that make it unique. One of the absolute highlights of our trip to Sicily! We had the most wonderful afternoon cooking with Maurizio in his home. From the moment we arrived, it felt less like a cooking class and more like spending an afternoon cooking, eating, drinking wine and laughing with a friend. We started with aperitivo and then learned to make homemade pasta and tiramisu from scratch. We made two different pastas; tagliatelle with Maurizio’s own almond pesto, which was absolutely delicious, followed by Pasta alla Norma prepared in his own style with our homemade cavatelli pasta. Everything was fantastic, and Maurizio made the whole experience fun, relaxed and approachable. We left feeling like these are dishes we can actually recreate when we get home, although we’re pretty sure they won’t taste quite as good without Maurizio there showing us the way! What made the afternoon especially memorable was getting to know Maurizio beyond the cooking. We talked about music and his fabulous music collection. Also we listened to a playlist of great songs while there. And, after dessert we were lucky enough to see the room where he creates his own music. He even played the keyboard for us! Which was an unexpected and special ending to an already wonderful afternoon. We honestly could have happily spent more time hanging out listening to music and talking with him. Maurizio is a fantastic host! He’s warm, funny, and was just genuinely fun to spend time with. The food, wine, conversation, music and entire experience were everything we could have hoped for. We’ve had so many wonderful experiences while in Sicily, but this was truly one of the highlights of our entire trip. If you have the opportunity to spend an afternoon cooking with Maurizio, do it. We would recommend this experience without hesitation!

I had such a wonderful time with Maurizio! I happened to be the only person in the class, but it never felt awkward or quiet — it felt more like spending the afternoon at a friend’s home, cooking, eating, drinking wine, talking about Sicily, food and music. Maurizio welcomed me with a beautiful platter of cheeses, breads and dips and gave me time to settle in before we started. We made tagliatelle and cavatelli completely from scratch, along with two delicious sauces, and I learned several simple techniques I had never come across despite cooking for years. The tiramisu lesson was especially useful — I finally learned how to get just the right amount of coffee into the ladyfingers without making them soggy! We enjoyed some excellent wine and Prosecco, talked about his incredible vinyl collection and Sicilian culture, and one of my favorite surprises was hearing Maurizio play the piano. He even packed up the food I couldn’t finish for me to take home. The only tiny note is that the class ran quite a bit longer than the listed time, so clearer timing beforehand would help with planning. Overall, this was so much more than a cooking class — warm, personal, delicious and genuinely memorable. Highly recommend!

My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
