This course was created with the desire to put at the center the authentic recipes of three pillars of Italian cuisine: Carbonara, Amatriciana, and Cacio e Pepe, just as culinary tradition dictates. In an era where these dishes are often reinterpreted or altered, here we return to the essence: a few carefully selected, high-quality ingredients, proper technique, and respect for history.

During the course, you will learn to prepare Carbonara with its authentic ingredients and the secrets to achieving a creamy egg without scrambling it; Amatriciana, where the choice of guanciale and tomato affects the balance of fat, acidity, and flavor; and Cacio e Pepe, with all the tricks to create a perfect emulsion. A course designed for anyone who loves Italian cuisine!

Cooking is my favorite form of self-expression. I love regional cuisine and, whenever I visit a new place, I feel the need to taste its traditional dish. My way of cooking reflects these encounters with different cultures and traditions, which over time have enriched my journey. I don’t define myself as being tied to a single region: my recipes are eclectic, even though their foundations—drawing on the teachings of Artusi—are the pillars of everything I do. I love making fresh homemade pasta and working with doughs: bread, pizza, piadine, and focaccia are a fundamental part of my cooking. In addition, thanks to my love for nature, whenever possible I use wild flowers and herbs to bring life and soul to the dishes I create with passion.
