Prosecco, one of the most appreciated Italian wines, is perfect for an aperitif and pairs wonderfully with first courses, especially ravioli. We will begin the day by preparing a typical aperitif from Puglia, featuring a selection of cured meats, cheeses, warm focaccia, meatballs, vegetable bruschetta, and other seasonal delicacies. Then, we will prepare ravioli with a delicate, thin layer of fresh pasta filled with ricotta and vegetables. At the end of the lesson, we will savor our creations together, enjoying a tasting of everything we’ve made, and conclude with an irresistible surprise: fried ravioli as dessert. A unique experience that combines tradition and elegance.

Overall the only ingredients we used were flour, semolina, olive oil, olives, tomatoes, 2 eggs, cocoa powder, sugar, ladyfingers, Strega and coffee liquors and salt and created the best focaccia we have ever had, two kinds of pasta, orechiette and cavatelli, and a stupendous tira mi su. After it all cooked and /or rested, we lunched on everything along with 4 local cheeses, 5 homemade jellies, one a savory peperonata, 3 local salume, and locally produced wines. The meal was restaurant quality (maybe better!), Giovannella was an effective, entertaining, and educational teacher, and the Masseria was lovely to visit. We highly recommend this experience to everyone!

Wonderful moment with Jeanette, who speak a very good French ! This was a pleasure to go to the market, to taste everything we were curious on. Then going to Jeanette’s Masseria, we cooked pasta, had a coffee and discussed about technics and trick that will help us make the same at home. We had a great meal and many advices on the region and the local food to taste ! Thank you very much Jeanette !

My cooking is the result of a family passion passed down from my mother, my grandmother, and shaped by the experiences and places that have been part of my life. I love cooking with seasonal, local products, and whenever possible, ingredients from my own garden. I enjoy growing and using aromatic herbs, transforming fruit into unique and healthy jams, as well as creating traditional liqueurs. My cuisine is typical of the Kingdom of the Two Sicilies, as a Neapolitan transplanted to Puglia, with Sicilian and Campanian grandmothers and a Pugliese mother-in-law. I love French cuisine and exploring “fusion” experiences that blend Southern Italian and international flavors.
