The panzerotto, a typical specialty of southern Italy, originated in my beloved Puglia and is considered one of the jewels in the crown of Puglia's food and wine heritage. Once a humble traditional dish, made with leftover bread dough and stuffed with cheese and tomato, today it has become a street food loved throughout Italy.

Living in Tuscany, I cannot help but combine the two traditions: I will prepare panzerotti with a special filling, with Apulian mozzarella wrapped in a Tuscan Chianina ragù. A meeting of authentic flavors... definitely worth trying!
