Trippa alla Fiorentina is one of the best-known local recipes, simple in its execution, a poor dish of Tuscan cuisine but tasty and decisive in its flavors. We continue our journey with gnudi , a first course of the tradition of this wonderful land, rustic and enveloping: it is nothing but the filling of ricotta and spinach ravioli without the puff pastry seasoned with butter and sage.

We end our Tuscan menu with the torta della nonna, a sweet composed of short pastry filled with custard and covered with pine nuts and powdered sugar, accompanied by a small glass of vin santo.
