Trippa alla Fiorentina is one of the most iconic dishes of Tuscan cuisine: simple to prepare, it originated as a poor man's recipe but is rich in flavor and character. Our journey through flavor continues with Gnudi, a rustic and enveloping first course, a symbol of Tuscan tradition. It is the filling of ricotta and spinach ravioli, but without the pasta, served with melted butter and sage to enhance its delicacy and authenticity.

Abbiamo avuto una bellissima serata con Anna e sua figlia Maria nella loro bella casa privata. Ogniuno di noi 5 ha partecipato alla preparazione della Pappa al Pomodoro, i Gnudi e una stupenda Torta della Nonna, seguita da una cena seduta con vino a godere dei deliziosi frutti di nostro lavoro, e con allegre chiacchierate. Ringraziamo Anna e Maria per la loro calorosa simpatia, e anche alle Cesarine per averci permesso di modificare la prevista menu, e-soppratutto per la gentile flessibilità quando mi sono accorta di aver fatto un errore di data nella originale prenotazione.

We had a wonderful evening with Anna and her daughter Maria in their lovely home, learning how to make Pappa al Pomodoro, Gnudi and a beautiful Torta della Nonna. Each of the five of us participated in the cooking process which was followed by a fabulous meal, enjoying the fruits of our labor as well as the company of Anna and Maria over a glass of wine! It was a wonderful evening and we highly recommend it to all those looking for a unique Tuscan experience!

What an amazing experience with Anna and her English translator Diba. Held in Anna's beautiful home she made us feel like family. My husband does not like liver and loved the liver on the crostini so much that he wanted the recipe. Everything was mouth-watering delicious. We would do this all over again. Thank you!
