    I will pass on my passion and together we will prepare three different risotto depending on seasonality or your requests/needs. Risotto alla milanese, alla monzese, speck and zucchini, squid, pumpkin, strawberry, lemon and rosemary and many other flavors to discover. We will discuss the types of rice suitable for this preparation and the techniques needed to make a perfect dish. Did you know that true Milanese serve risotto on flat plates and eat it with a spoon?

    Enrico was amazing!! He welcomed us into his home and we had a wonderful afternoon cooking with him and his wife. The food was all delicious and we will definitely be making them at home. We highly recommend cooking with Enrico!

    This was my first time in Italy and I was looking forward to taking a cooking class. This is not just a cooking class, it is an amazing, wonderful experience. Enrico and his wife Christina are lovely people who made you feel welcomed in their home. Enrico is hilarious, energetic, and made this a wonderful memory. He made learning how to make Osobucco con risotto, and tiramisu dessert easy and fun. I will not forget his comment when I asked how much butter? He would say with a big smile “as much as you want”. He is an excellent teacher, detailed and never rushed us. We were provided with the recipes and a gift of learning the art of Milanese cuisine. The food was delicious, after cooking we all sat together at the end to eat and drink.

    This course was an amazing experience. Enrico is a talented chef and a skillful teacher. I learned a lot about risotto and cooking in general. What I take home will make my life better and I will always think of Milan. The strawberry risotto was an entirely new experience for me. I’ve never had a dish like that before, and Enrico helped me think about how the technique is generalizable to other kinds of fruit. In addition to an enjoyable time cooking, I also liked chatting with Enrico and Christina. They are lovely people and their home was comfortable and warm.
