    Palermo baked pasta is a type of ring-shaped pasta with meat sauce, peas and cheese. Its preparation requires attention and time. This type of dish is eaten on Sundays or holidays.Every Sicilian family has its own secret recipe and I am ready to reveal mine.

    You will be welcomed in my atelier nestled in the Ballarò neighborhood. Together we will prepare this type of pasta and an appetizer, the famous "Cacio all'Argentiera": caciocavallo cheese with vinegar, oil and oregano,also baked in the oven. We will enjoy lunch with excellent organic Sicilian wine and finish with homemade liqueurs. Water, encores and coffee will not be missed!

    Our Sicilian cooking experience with Rosa in her home was fantastic. Rosa expertly showed us how to make pasta and Tiramisu from scratch. Rosa cooked the pasta and we enjoyed a wonderful meal with two other nice travellers from Switzerland. We highly recommend the Pasta & Tiramisù cooking class with the beautiful Rosa.

    We had a Pasta & Tiramisu cooking class with the beautiful and delightful Rosa on Friday 13th 2024 in Palermo. Rosa was so warm and welcoming we felt right at home as she expertly showed us how to make fresh pasta and Tiramisu from scratch. We later enjoyed the beautiful food with Rosa and two wonderful fellow travellers from Switzerland. Not only did Rosa wow us with her beautiful food, her singing was amazing and wonderfully entertaining. We highly recommend this experience with Rosa.

    My experience today was just incredible. Traveling from South Louisiana, I wanted to learn how to make pasta from scratch in a comfortable and friendly environment. I am a novice cook. Somewhat experienced. Anyway, the highlights for me were: Maria Rita was an excellent hands on teacher. She paid close attention to my comfort level. If o wanted to work, she let me work, if I was tired, she finished for me. Maria Rita’s daughter Francescana was there to translate for us. Maria Rita knows English however Francesca is fluent in English. They welcomed my wife into their home at no extra charge. The conversation was just natural and warm. Maria Rita and her daughter are simply good people. We laughed a lot. The food was so fresh and so good. All of the vegetables we prepared and ate were home grown by Maria Rita. The food highlights for me were: homemade sun dried tomatoes in her homemade olive oil, with homegrown basil and garlic. The bruschetta, wow! Maria Rita’s tomatoes are grown hydroponically. She has her own chickens because her daughter loves fresh eggs of course :) The fresh made pasta was Delizioso and I was proud to make it with semolina flour and a pinch of semolina. I could go on and on, but instead I will tell you that my wife and I will be back at the home of Maria Rita. We felt so very comfortable. Top experience in Sicily so far!

    Rosa was very welcoming from the first second! Very open and warm, and it was clear she is used to host. The food was great and showed some different tastes, in plenty portion sizes! We also got som great advice on the city!

    Rosa welcomes her guests to her apartment in the heart of Ballarò. "I love to cook and experiment, but in the end I love to cook and eat Sicilian, using Sicilian products at Km 0. What I cook was taught to me by my mother, by aunts and grandmothers acquired over time. I am a singer and actress, so I love to sing while I cook and entertain my guests with songs and stories of our Sicily bedda. At my table, simple and well-finished, seasonal dishes, with attention for vegetarians and gluten intolerant. "
