    Tortellini in broth or alla Panna represent a delicious first course in the Modena tradition, featuring a filling of meat, Parma ham and Parmigiano Reggiano that explodes in the mouth. They are served in a rich chicken or capon broth; for gourmand palates, there is also a alla Panna version, with cream straight from the dairy, authentic and tasty.

    In my family, it was my grandmother Emila who brought us together during the Christmas and Easter holidays to enjoy these traditional dishes together. Today I am the one who keeps this wonderful tradition alive, once again gathering the family around the table and celebrating the connection to our roots.

    "I love cooking traditional dishes, tortellini, lasagna, passatelli ... crescentine cooked in their molds and fried dumplings accompanied by cold cuts and cheeses. I would like to be able to delight my guests with these goodness, cook and share the tradition with them".
