    Three-course course and menu: Pesaro passatelli - the recipe we will learn - followed by a main course and dessert.

    Two hours in my country kitchen in the hills of Ginestreto, where we will prepare the typical passatelli, the first dish in the city to bear the De.Co. (Municipal Designation) mark, which, unlike those from Romagna, are served with fish broth. In my case, the fish used are the heads of baganelli - a small white fish from my area - which I recover from the preparation of the second course: oven-baked baganello fillets with artichokes. To make the passatelli, we will use my great-grandmother's fer, an ancient tool that still bears the marks of all her preparations. To conclude the menu, a tart with homemade berries.

    We went to the cooking class hoping to learn some Italian cooking skills, but we walked out with much more than that. Silvana was one of the warmest (and her husband) hosts we could have wished for giving us cooking lessons, cosy conversations and laughs. The evening finished with us eating our homemade meal in their garden between the olive trees. This was definitely one of our highlights of our trip in Italy. 100% recommend!
