    Sfince are soft, airy fritters , peculiar to Palermo, that are fried and filled with ricotta cream, chocolate chips and orange zest.

    Their name comes from Arabic and means sponge . They are prepared for Father's Day , but actually given their goodness they can be found in all pastry shops in Palermo from November to May . I will pair this delicacy with a Moscato dell'Etna , a sweet raisin wine with fruity notes and a slight minerality.

    We had a lovely time cooking with Rosa Maria and eating dinner with her family. We were just 3 and cooked in her kitchen. We made Tiramisu and 2 types of pasta by hand. One small suggestion: while we made the pasta's and the pesto, there were other elements added to the final dishes and we weren't really involved in that. It would have been nice to be part of how it all came together. The meal itself was one of the best we had on our 2 week Italian vacation! We plan to make Pasta alla Norma this weekend at home!

    We had an excellent cooking class with Rosa Maria Ingram at her home. After visiting the market, we helped cook a wonderful lunch including caponata, homemade cavatelli pasta with eggplant and zucchini, and a dark chocolate cake with ricotta cream. We learned some great tips, received the recipes and ate a delicious lunch. Rosa Maria was a great teacher and cook and even changed the menu to a chocolate dessert to accommodate our tastes. We highly recommend Rosa Maria Ingrao in Palermo, Sicily.
