    The most iconic dish of Sicilian cuisine. The arancino or arancina depending on the city. We will prepare the classic arancino al ragu and the vegetarian version alla norma, with a stringy heart, fried eggplant and roasted tomato.

    Afterwards we will taste it accompanied by a good glass of Etna natural wine.

    We loved our pasta cooking class with Cesarina Laura. We arrived very early but Laura welcomed us inside right away and served us fresh brushetta and wine while she finished setting up. We learned how to make 3 unique pastas and all of them tasted delicious. Literally the best pasta I have eaten in my life. But honestly the most wonderful part of the experience was Laura herself. She is a such a great teacher and amazing chef. What a perfect way to end our stay in Sicily. Cannot recommend a class with Laura enough!

    My cooking class with Laura was the highlight of my Catania stay! Laura was flexible on the menu and happy to adapt to my preferences. We made a delicious caponata, pasta alla Norma and tiramisu in her gorgeous apartment kitchen, and shared a natural rose from her friends’ winery on her balcony with views of Catania and the ocean . She was patient and helpfully explained the rationale behind certain ingredients and steps so I could easily adapt when I attempt the recipes back in Melbourne. Highly recommend !!!
