I'll be waiting for you for my Campania cooking class to discover the history and origins of local ingredients, learn how to pair flavors, and how to choose the best fresh produce.
We start with a typical local dish: eggplant meatballs, made with basil, Parmesan cheese, capers and olives. Then we continue with a great classic, potato gnocchi, topped with tomato and mozzarella sauce, a typical Sorrentine recipe. To finish, torta caprese, a dessert born in Capri, very popular in Campania, made with almonds, chocolate and citrus fruits from the Amalfi coast. At the end of the course we sit at the table and eat the dishes we prepared together. My cooking is typical Campanian, with traditional dishes, using first-rate products.
- Chef Andrea gave us an amazing experience. He was kind enough to give us a ride to and from his place. We had a great conversation during the drive and got to know more about him. Once we reached his place, we were served some delicious caprese salad(fresh mozzarella and tomatoes from the garden) and some Processo. Chef then gave us a brief overview of the items we were going to prepare and we got started right away. Our first item was caprese cake, Chef showed us how to prepare the cake and we helped him prepare the batter and set it in the oven. Next, we learned to make different types of pasta right from scratch - Ravioli, spaghetti, tagliatelle etc. It was just great to learn how this is made. The ravioli had a caprese stuffing with a tomato sauce and it was just outstanding. Chef also made us spaghetti with lemon cream sauce which was so simple with just the local ingredients from Sorrento. This was one of the best pasta we've ever had. Everyone at Chef's home were so friendly and welcoming. It was a great experience overall and we would recommend this to anyone who is interested in cooking classes in Italy. Cheers!
- Chef Andrea was incredible! We were in Italy for 9 days and the cooking class with him is one of our top highlights for sure. Andrea was very talented but also patient with us to make sure that we had a chance to try to do everything and learn all the techniques. Andrea was so friendly and kind to invite us into his home and we cooked 3 pasta dishes AND a traditional cake for dessert. At the end of the night, he gave us a recipe book and we asked him to sign it - that's how much we loved it! We can't wait to visit again and hopefully see him at the restaurant that he works at full time during the busy season in Positano. Thank you Andrea for everything - we had a blast and would recommend this experience to anyone traveling to the Amalfi coast!
