Today we will dive into the magical creation of puff pastry, exploring every aspect of this culinary artifact. We will talk about the ingredients that make it up, understand the balances in different recipes, and tackle the methods of dough making together. We will feel the pastry slip through our hands, shape the loaf, and achieve lamination through several rounds. After this adventure in the kitchen, we will bring to life such delicacies as rustici, sweet and savory galettes, the fascinating sporcamuss from the Apulian tradition, sfogliatine and the classic millefoglie. Each of you will take home a small tray with your creations, the result of our collaboration in the kitchen. To conclude this culinary experience, we will enjoy a buffet tasting together.
