We will explore the culinary art of Gallura through the preparation of three traditional filled pastas, all based on the ancient technique of "pasta violada."
We will begin with Panadas, small baskets of pasta stuffed with meat and potatoes, baked for an irresistible crispness. We will continue with Seadas, typical Sardinian sweets, filled with cheese and lemon, fried and then garnished with sugar or honey for a perfect balance of sweet and citrus flavors. We will finish with Formagelle or Casjatine, baked sweets made with ricotta and raisins. These recipes have variations throughout Sardinia, but we will focus on those typical of Gallura. This will be an authentic culinary experience, enriched by the company of an excellent Vermentino.

- Had a lovely and highly memorable evening with Carla and her husband Georgia as our hosts for aperetivos while visiting Treviso. They made it so much fun, and were game for our non existent Italian + Google translate. Had fun getting to know them, and Carla made delicious food for us to taste and try, even accommodating me as gluten free. Great conversation and new friends! Recommend this for folks interested in a different experience and wanting to learn more about local cultures and lives.

- I had the best time at Carla’s pasta making class! Her and her family could not have been more kind, friendly and welcoming. I am vegetarian, which was no problem for them to cater for. We made gnochetti and ravioli which was put with delicious tomato sauce and a sage/butter sauce. There was also plenty of snacks and wine during the rest breaks. After the “all you can eat pasta” I had the most delicious tiramisu. I left the class with a full stomach and the biggest smile. Carla and her husband are great at teaching and demonstrating. They had so much knowledge to share. It was also really interesting to learn about their roots in Sardinia and the differences in food and wine across Italy. I HIGHLY recommend this class to anyone in the Treviso area looking to do a cooking class. I could not have had a better time. Thank you so much Carla!
- I had a lovely evening with Carla and her husband coming up king and eating al fresco in the charming garden. Though I have eaten pasta most of my life, it was my first time making pasta from scratch, and truth be told, Giorgio did more than me. I could almost hear his Sardinian mother tut-tutting at my attempts to roll the gnocchettii! The ravioli filling was a revelation, and the tiramisu and local Prosecco and Soave exactly as delicious they should be in in their home region of Veneto. Though my Italian is non-existant, Carla was a great Cesarina and made sure I understood all the steps and enjoyed my evening.
