    First of all, we will prepare risotto with seasonal vegetables. Along with pasta, risotto is a cornerstone of Italian cuisine, and learning how to make a good risotto is a key point for a chef.

    After risotto we will continue with grandmother's involtini: these are turkey rolls that my grandmother used to make for me when I came back from a trip. To me, the rolls, with their cheese sauce, taste like home!

    Last but not least Tiramisu: the king of Italian desserts.

    We had a great cooking class with Carlo! We learned a lot about the pasta making and got some good tips for making the best pasta at home. The pasta we’ve made was very delicious en very tasteful. Thank you for your hospitality Carlo!

    Carlo’s class was great, beyond expectations!! We cooked two pastas (ravioli and spaghetti alla chitarra cacio e pepe) and tiramisù. Carlo is very patient and explained step by step! And during the process he gave precious tips that you usually don’t find in the books and that really make a difference! He also gives information on how to cook a healthier pasta, which was very nice to know about! I would absolutely recommend Carlo’s class to anyone willing to know how to make great pasta!! Don’t even think twice, that’s the class you are looking for!! :)

    I attended Carlo’s pasta making class in order to learn to make pasta from scratch and perhaps a new sauce or 2. I learned very quickly that pasta is an art and an easy one at that. Gnocchi was also included, also made from scratch. Carlo is very passionate about food, and he shares many tips and tricks during the class. This was my second class with Carlo. They are very hands on so be prepared to get your hands sticky! The classes are very small, and the meal we shared was amazing. I shared a previous class with a wonderful family also visiting Florence! I would highly recommend Carlo’s classes; they are very professional and informative. He also shares the recipes when class is finished.
