Maccheroncini and orecchiette were the Sunday dish, prepared with ancient and wise gestures. With the "cavaturu," a typical Salento iron, the maccheroncini were pulled; with a flick of the knife and a snap of the fingers, the orecchiette took shape. We would dress them with a sauce scented with fresh cherry tomatoes, basil, local cacio ricotta cheese and a drizzle of extra virgin olive oil from Puglia. At the table, a glass of Negroamaro will enhance the flavors. And to finish, the famous pasticciotto: golden shortbread and custard come together in a sweet symbol of Salento, accompanied by a glass of homemade nocino, extracted from the green walnuts in our garden.

However, those of a national nature that are fully part of the traditional Mediterranean diet cannot be excluded. From the coasts of Salento, tagliolini with seafood, linguine with sea urchins, soups and fried fish to name a few, and then again, arriving inland, the famous ciciri and tria, maccheroncini and orecchiette with sauce, seasoned with excellent aged ricotta cheese or, for gourmets and risk-takers, strong ricotta. This is much more for all those who want to be our welcome guests.
