I suggest ravioli roses filled with prawns or, if you prefer, a vegetarian filling, two-coloured tortelloni with smoked ricotta, and finally ravioli with aromatic herbs filled with seasonal vegetables. A wonderful course all year round, adapting the fillings to the seasonality of the chosen ingredients.
