The three-hour course includes the making of these three typical Roman Sunday dishes.We begin with the preparation of Tiramisu that needs to rest in the refrigerator for at least an hour.We will continue with the preparation of the ragout that will cook slowly while we prepare handmade fettuccine.Last we will prepare the "stracciatella," a broth in which we are going to dip a beaten egg flavored with spices and parmesan cheese.And finally, if we have been good, we will taste our labors!

In just three courses I will try to accompany my guests in the heart of Roman cuisine with an appetizer based on small appetizers.A reinterpretation of the famous saltimbocca alla romana.As a first course I tried to play with the ingredients that cannot be missing from a Roman's table:Fresh pasta, guanciale, pecorino romano and pepper.We will sweeten the end of the evening with a classic coffee tiramisu.

Easter lunch always starts with a rich appetizer where as per tradition we find torta Pasqualina , which is a cake with long leavening slightly sweet and which is eaten with typical Lazio salami, corallina, and hard-boiled eggs, then there will be Gran Fritto di Pasqua , with seasonal vegetables like artichokes , and also ricotta cheese and apples, the first course of the Easter tradition will be classic ravioli with ricotta and spinach with a sauce with butter ,sage and parmesan cheese, and then lamb chops a scottadito (lamb) with baked potatoes scented with garlic and rosemary. Dessert is a rich tart with a soft filling made of ricotta aromi and chocolate chips !

It will be a typical Roman lunch, I will show you how to prepare a real Roman "cacio e pepe" and then all together at the table, after the first course there will be the rolls as they were made by grandmothers on Sundays and to finish the Roman briosce or maritozzo home made, of course, and stuffed with whipped cream!!!
