Maria Carla was born in Umbria, but has lived in Rome for many years, in the Monteverde Vecchio district, surrounded by greenery and a stone's throw from the center. Our Cesarina in the kitchen rediscovers family recipes, adapting and modifying them according to the rules of kasherut (the different Jewish culinary habits). "The recipes I propose are all very attentive, both to seasonality and to the choice of raw materials; I can certainly say that my cuisine combines tradition and health."
- Giudia artichokes
- Spaghetti with bottarga
- Anchovies with endive
- 'Concia' of zucchini (side dish that comes from the Roman Jewish gastronomic tradition)
- Cassola (recipe of the Roman Jewish tradition)
