Hi from Cristina!

Cristina welcomes her guests in a villa surrounded by greenery with large outdoor spaces and large windows, where you can admire the garden and the centuries-old olive trees. A little corner of paradise not far from the center of the Eternal City. "Since my tender age I have always looked with admiration the love with which my grandmother, of Apulian origins, worked for hours in the kitchen. I still remember her hands and her aprons, often soiled with flour and the aroma of 'good things and genuine' that spread throughout the house and enveloped me in a pleasant feeling of well-being."

We've had an amazing time with Cristina! She is an actual chef and was very patient and involved to teach us. We got to make supplì, tonnarelli alla chitarra con cacio e pepe and maritozzi con panna. Everything was delicious!! Can't wait to try and do it all at home! Cristina also offered us drinks and bruschettas as appetizers. Grazie Cristina per aver condiviso i tuoi segreti con noi :)

Cristina’s class on the four roman sauces was fantastic and she is lovely. I have taken many cooking classes over the years, several in Italy, and this was by far one of the best. Taking a private lesson was so much more enjoyable for me than being in a group of people at different levels of experience. Cristina spent time going into both the importance of ingredients and also the nuances between the preparation of the 4 sauces. I recommend coming hungry because there is a lot of food to eat! Grazie Cristina for being a wonderful host and sharing your home, olive oil, and knowledge with me. Buone Feste!

I very much enjoyed the class put together by Cristina in her beautiful home. I learned a lot that one can't glean from just looking at a recipe, eg. type of flour, the feel of the dough, specifics on the sourcing of pecorino, relationship between cache e pepe, gricia, carbonara and Amatriciana. These Roman pasta recipes are deceptively simple so the quality of ingredients and the technique are paramount and Cristina taught us well. Every dish we made came out perfectly. I can't wait to make these again now that I'm back home.
