I love preparing first courses with homemade pasta, such as maccheroni alla chitarra, ravioli, and lasagna, along with risottos and dried pasta dishes featuring mushrooms and various vegetables. I have happily experimented with many dishes from Abruzzese cuisine, including ndurciullune, pallotte cacio e ova, and stuffed rabbit. Additionally, whenever I have the chance, I enjoy being inspired by the typical cuisines of Tuscany and Lazio.

There are experiences you think will be “nice”… and then they become so much more. The one we had with Giorgio and Maria was exactly like that. There were three of us – me, Francesca, and Felicienne. We were greeted with a carefully prepared aperitivo and two people genuinely ready to listen to us. Even before we started cooking, a genuine exchange was created, filled with chatter, smiles, and mutual curiosity. We weren’t customers: we were guests. We were only supposed to make ravioli… but between laughs and technical advice, we found ourselves making tortellini, cappelletti, and even spaghetti alla chitarra. Getting our hands into the dough, literally, guided by their patience and passion, was engaging and authentic. Giorgio and Maria don’t just teach a recipe: they share a piece of their history. The best part? Sitting down together at the table and dining with what we had prepared. At that point, Claudia, their daughter, joined us, and the atmosphere became even more familiar. A spontaneous, sincere bond was created – the kind you don’t expect but that you take away with a smile. It was an experience full of positive emotions, human warmth, and true simplicity.
