    The course is held in a beautiful villa surrounded by greenery, centuries-old olive trees, and located just a few kilometers from St. Peter's. In this welcoming and authentic setting, we will prepare handmade tonnarelli pasta using a "chitarra" (a special knife), learning the four most iconic versions of this traditional Roman dish: cacio e pepe, carbonara, gricia, and amatriciana.

    During the lesson, each participant will knead, roll out, and cut the pasta, discovering techniques and interesting facts related to these recipes that represent the heart of Roman cuisine.
